Bikini

Yields 10 guests

For the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Premix (produces 850ml, enough for 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Method

Making the Cordial: Place the listed ingredients into a saucepan, bring to a gentle boil, mixing so the sugar melts. Then, take off the burner allowing it to cool completely. Pour into a clean bottle, cap it and refrigerate it chilled, it will last for about a month.

Preparing the Cocktail Base: Pour the specified liquids into one large bottle, allow it to infuse for one hour, then pass it through preferably using cheesecloth, to ensure it's fully clarified.

For serving: Pour 85ml of your premix into your stirring glass containing ice, and agitate lightly for one minute to cool it down. Filter into an frosted cocktail glass or a similar vessel, decorate with the cranberries adding the final touch with a brief mist of the essential oil above the glass.
